Made this quick pesto-like dip this week. It was made in no time using a few staple items from the pantry. It would be so easy to whip up if you have unexpected guests rock up last minute.

Sure it is a dip, but I also use it as a pesto to add some flavour to meat, fish or vegan dishes.

The benefit of the ingredients used is that they have a long shelf life. Meaning you can store them in the fridge, pantry for several weeks or months.

If I have last minute guests come over I do not need to race to the stores to buy snacks as I know I have these items handy in the fridge.

For this recipe I used sun dried tomatoes in a jar. You can make your own using a dryer or simply dry them in the sun.




Sun-dried tomato Dip
Ingredients
1/2 cup sun-dried tomato
1/2 cup walnuts
2 tablespoons avocado oil
pinch sea salt
Directions
Blend in a high speed blender.

Serving suggestions:
Serve with gluten free crackers and veggie sticks.
