Hien (Lifestyle coach) has invited me to host mini raw workshops with his training group to inspire them on their health and fitness journey. It is great to see the girls progressing mentally and physically each week with a smile on their face.

The recipes
 

Raw Natural Naughties Goji Cheese Cake
Ingredients:
For the base
1 cup dates
        1 cup almonds
1/2 cup coconut flakes
few prunes
4 tablespoons raw cacao powder
 
For the filling
1 1/2 cups soaked cashews
         3/4 cup melted coconut oil
1/2 cup goji berries (I prefer using fresh berries)
4 tablespoons agave (other sweeteners can be used)
 
For the chocolate garnish
1/2 cup melted coconut oil
         1 tablespoon agave
3 tablespoons raw cacao

Directions: 
To make the base
  1. Process ingredients together in a food processor until they come together.
  2. Flatten the mixture down onto the base of a cheese cake tin.
To make the cream
  1. Process the ingredients in a high speed blender.
  2. Pour on top of the base.
For the garnish
  1. Whisk together the ingrdeints.
  2. Pour onto the cake. (I use a spoon and pour little swirls over it)

Raw snickers
Base Layer:
Ingredients:
2 cups cashews
2 tablespoons coconut oil
2 tablespoons maple syrup
pinch sea salt

Directions:
  1. Blend the cashews in a food processor to form a flour/crumble. 
  2. Add in the coconut oil, syrup and sea salt. Blend. 
  3. Pat down into a rectangle on wax paper and freeze.
Middle Layer
Ingredients:
Raw caramel
  1 cup almond
  6 dates
  1/2 cup honey
1/2 tablespoon vanilla
2 tablespoons melted coconut oil
pinch sea salt
 
Reserve for topping:
1/2 cup of chopped almonds
 
Directions:
  1. Blend the nuts into a fine powder in a food processor. 
  2. Add in the dates, honey, coconut oil, sea salt and vanilla. 
  3. Blend in to a sticky caramel. 
  4. Spread the caramel over the frozen base. 
  5. Press in 1/2 cup of chopped almonds.
  6. Freeze for an hour.
