Raw Food Cake.

Here is a wonderful raw cake that you can enjoy over the festive season! I made this for a friends birthday and am also making one to celebrate the new year! It is popular as it is free from dairy, gluten and processed sugar. It taste like a traditional "cheese cake" but it is healthy and good for you too!

This cake uses a range of healthy and organic ingredients. 

Coconut oil is one of the main ingredients. Coconut oil ha earned a popular reputation in the health and fitness industry over the last few years. I have seen more health shops stock the oil. Have been surprised to see some supermarkets stock it. It is no surprise that is has been in demand due to its wonderful health benefits. It is a great source of nutrients as well as healthy fats. Many people find it assists to boost the metabolism and in some cases can assist with weight loss.

Recipe for Raw Cashew Cheese Cake

Ingredients:
For the base
1 cup walnuts
1.5 cups dates
For the filling
  3/4 cup coconut oil
1.5 cups cashews, raw and soaked
1/4 cup berries
2 teaspoons raw honey

Directions:
For the base
Process ingredients in a food processor, until they all come together.
Flatten in a cheesecake tin.
For the filing
Process ingredients in a high speed blender. I suggest a high speed blender from Raw Blend.
Set in fridge.
Garnish with fresh berries and Natural Naughies Raw Cacao topping
