Inspired by my favourite italian dessert!

This cake does not use coffee, you will be amazed that the cacao nibs taste like ground coffee too!


The cake base

1/3 cup really raw cashews*
1/3 cup walnuts
1/3 cup almonds


2 tablespoons cacao nibs*
2 tablespoons really raw cashews


3/4 cup cashews
5 spotty bananas
1/3 cup honey or agave
1/3 coconut oil (melted)
1/3 cup coconut milk
vaniella (1 teaspoon)


2 tablespoon cacao powder
1 cup strawberries chopped in half


To make the cake base, process the nuts in food processor. Process to a fine powder. Do not over process or it will turn to a nut butter.

To  make the "coffee", Grind the cashews and cacao nibs to a powder.

To make 'zabagione', combine the banana,coconut milk, cashews, honey, coconut oil and vanilla in food processor till smooth.

To put the 'tiramisu" together

Sprinkle the base ingredients into a pan, pour filling on top of base, Sprinkle the "coffee' on top, dust with cacao powder and decorate with strawberries.

Let cake set in the freezer for an hour before serving.

This cake will last a few days infridge and few weeks in freezer
