I was sent some hemp flour a while back to review. I found some in the pantry and thought it would be a good opportunity for me to experiment since I like being in the kitchen. Perhaps consider it a "procrastination-bake."
 
I have heard that hemp products have been taken off the shelves in the last few months. I'm honestly not too happy about that! I am loving hemp products and don't want to see them gone.
 
Benefits of hemp:
  • Rich in protein, essential fatty acids, and many vitamins such as A, B, D, E, sodium, calcium, iron, and dietary fiber
  • Assists in suppressing the appetite, which can result in weight loss as it keeps you full for longer
  • Can help reduce cholesterol and give you a healthy heart
  • Keeps your digestive tract clean and healthy
  • Gives you additional boosts of energy
 
I do like using hemp products, including the flour. It tastes a little "nutty" though. I do understand that hemp may not be everyone's cup of tea. But I personally love hemp products as I also feel so good when I am using them. Really happy!
 
Today's recipe is hemp flour cupcakes. This "cupcake" is actually cross between a cake and a bread. It is not really sweet, so you can top it with honey to sweeten or even butter and vegemite for an alternative to bread.
 
Hemp Flour "cupcakes"
Ingredients:
2 whole eggs
8 teaspoons hemp flour
1 tablespoons peanut butter
1/4 banana
1 tablespoon melted coconut oil
3 teaspoons flaxseeds, ground
a little raw honey

Directions:
  1. Process together to form a thick "custard" like texture, but "grainy" too. A little water can be added if needed.
  2. Bake on low/medium heat.
  3. You will know when cupcakes a ready when they are firm.
  4. Allow to cool
Serves 3-4
