This recipe is delicious and is the perfect alternative to traditional banana bread as it is free from white processed sugar, white flour and dairy.
In 2007, I decided to reduce the amount of grains and gluten I ate. As a result I did miss little treats here and there, so I started to bake my own healthy cakes and treats. 
Paleo recipes appealed to me more than body-building recipes while searching the net, since they only contained whole food ingredients. I have never been an advocate or fan of artificial sweeteners or just looking at the nutrition panel. To me, the ingredient listing is most important.
As most people know I get really excited about new ingredients and when I got some new ingredients from Banban I had to get baking.

Serves 10 
Prep time: 15 min, 
Cook time:30- 40 min

- 3 cups coconut flour
- 1 tsp. baking soda
- 1 tsp. cinnamon 
- 1/4 cup coconut oil, melted 
- 1/4 cup coconut sugar
- 3 eggs
- 1 Tbsp. vanilla
- 4 small bananas, mashed

  1. Ensure oven is warm and preheat to 350 degrees.
  2. Combine the coconut flour, baking soda, cinnamon together.
  3. In another bowl, mix coconut oil, coconut sugar, eggs, and vanilla.
  4. Mix wet ingredients well, then add the mashed bananas.
  5. Combine the wet and dry ingredients together.
  6. Pour the batter into a 9-inch pie dish , grease or line with baking powder
  7. Bake for  around 40 minutes or until done- ready when browned and a toothpick should come out clean
  8. Allow the cake to cool. 
Serve with cinnamon, crushed walnuts and a herbal tea.
