Gluten Free Oat Cookies

These cookies make the perfect snack. They are tasty, easy to make, and created using whole foods. They are gluten, soy, dairy, egg and gluten free too!

1/2 cup melted coconut oil
3 tablespoons gluten free oats
1 tablespoon almond meal
1 teaspoon almond essence
1 tablespoon coconut palm sugar
1/2 teaspoon cinnamon
to top: cacao nibs and goji berries
Mix all ingredients together.
The measurements are approx only. The mixture should be firm enough to form into balls and then flattened for "cookies".
If the mix is too wet, add in more gluten free oats or almond meal. If too dry, add in more coconut oil, melted.
Form into "cookies".
Place on a lined tray.
Garnish with the raw cacao nibs and goji berries.
Set in fridge or freezer until firm.
