Banaban Coconut and Peanut cookies

These cookies are so easy to make. They are dairy free, gluten free and loaded with nutrient dense ingredients.


2 whole eggs

1/2 cup coconut flour

1 tablespoon coconut sugar

1/2 teaspoon cinnamon

2 teaspoons coconut oil

2 teaspoons peanut butter.


Whisk all ingredients together

*The mixture should come together like traditional dough.

If it is too "dry" add in a little water and another egg.

If too "wet" some more coconut flour.

Form into bite size "cookie" shapes.

Place on a lined tray, a few cm space in between each as they will grown.

Cook on low/medium heat until cookies brown (approx 10-15 minutes)

*I always check mine every few minutes to ensure they do not burn.

Allow to cool before serving.

*Coconut Sugar is called ka maimai by the Banabans. I has been used as a sweetner for centuries. This sugar is processed naturally. This sugar is very nutrient dense and also rich in vitamins and minerals.

*Coconut flour is the perfect alternative to white sugar. It is nutrient dense and also gluten free.
