These almond butter bites are delicious. They are sugar free, dairy free, gluten free and vegan.

I prefer to use stevia in these to make them naturally sweet. I find that the less sugar I have, the less I crave it. Eating a diet low in sugars (including natural sugars) assists to balance my blood sugar levels and overall body. Each and every body responds differently to different foods. So if you really like sweet things or want a treat, you can add some natural sweeteners to these bites.
 
Natural Naughties suggests raw honey, agave, coconut palm sugar or a good quality brown sugar. Mesquite and Lucuma are two super foods that are slightly sweet and natural, I often use them too!
 
These make the perfect in-between snack!
 
Ingredients
For the almond centre: 
1 1/2 cups almond butter
  1/2 cup melted coconut oil
1 teaspoon cinnamon
a few drops of liquid stevia or other sugar alternative
 
For the coating:
1 cup melted coconut oil
4 tablespoons raw cacao
stevia or other sugar alternative
 
Directions:
To make the almond filling:
  1. Whisk together the ingredients.
  2. Pour into a lined dish.
  3. Freeze until firm.
  4. Slice.
  5. Transfer back to fridge
To make the coating:
  1. Whisk together the ingredients.
  2. Dip the squares into the coconut oil
  3. Place in freezer
Serves 12-20
 
These must be stored in the freezer before serving.
 
These Almond butter bites are calorie-dense per serve. However, they are also nutrient dense, so portion control is key.
 
I find that making them with stevia instead of honey kills the temptation to overeat, as you feel satisfied and full after one bite. This will help you  achieve the results you are after.


Home made almond butter.

I make my own almond butter and nut butters in my vita mix. Making nut butter at home is a great way to save time and money. Nut butters are so simple to make. Simply chuck your nuts into a vita mix and process till smooth. This can be time consuming so I will share my secret. I simple add some coconut or almond oil to speed up the process. You do not need to add additional oils if using an oily nut, such as cashew nut.
